RECIPE: The World's Easiest Dinner

One of us just got back from the UK and the other is still there…gallivanting around London with the hubby 😜🍸

As you guys know, we hit the road about once a month to go on tour. When we return home, we jump right back into mom mode and have to be everything to everyone. We are usually so tired and so busy with the kids, catching up on all the things we missed out on while we were away. Plus, we often have no idea what groceries we have left to work with when we come home! So, we like to take the pressure off and keep dinner super light and simple. One of our go-to recipes that’s quick and easy to whip up in literally no time at all are quesadillas.

It’s also a great option to leave for whoever is looking after your kids while you’re travelling because it only requires a few ingredients and a few minutes to make!

INGREDIENTS

  • Tortilla wraps

  • Tomato sauce

  • Shredded cheese

  • Veggies (whatever you can find in your fridge)

DIRECTIONS

  1. Lay the tortilla flat and add a layer of tomato sauce and then a layer of cheese.

  2. Fold the tortilla wrap in half.

  3. Toss it onto a pan and into the oven and bake until it’s golden brown.

  4. Add some kind of veggie on the side for a “well-balanced” meal.

  5. Call it dinner (because it is… Good job, mom!).
