RECIPE: Zucchini Noodles with Roasted Tomato Pomodoro

If y’all were watching our Insta stories over the weekend, you know that Cat was purging her house for the big move tomorrow. She basically has two houses right now but nowhere to live (they have to move out of their current home in order to stage/sell it but the new house isn’t ready yet 🙈). So needless to say, it has been a bit of a gong show…

Since Cat has been living in chaos, Nitty decided to cook a healthy meal and send it over to her because that’s just what friends do!!! It’s a WW recipe which serves two and has a zero SmartPoints value per serving for green, blue and purple. It only took about 30 minutes to make (10 mins to prep and 20 to cook), so it’s quick and easy!

This was actually Nat’s first time cooking with zoodles (or any kind of spiralled vegetable to replace the noodle) and it turned out so good. Spoiler alert - the zucchini noodles taste exactly like real noodles 🤯

If you missed Nat’s Insta story cooking tutorial, we thought we’d share the recipe for you in a blog post so that you can come back to it at any time and make it for yourself! It’s basically a pile of zucchini noodles that gets topped with a savory sauce made from sweet onion, grape tomatoes, garlic, and basil - and it’s delish.

INGREDIENTS:

  • Cooking spray - 4 sprays

  • Uncooked sweet onions - 2 oz, cut into 1/8-inch-thick slices (1/2 cup)

  • Grape tomatoes - 4 cups

  • Garlic cloves - 2 cloves, medium, minced

  • Basil - ¼ cup, chopped

  • Kosher salt - ⅜ tsp, divided

  • Black pepper - ¼ tsp

  • Zucchini spirals, fresh - 8 oz, 6 cups (Ps. if you want to make things easier, you can purchase these pre-made. Or you can make your own using a spiralizer, but it will add a few minutes to the prep time).

DIRECTIONS:

  1. Preheat oven to 425°F. Line a rimmed baking sheet with foil and spray with cooking spray.

  2. Cut onion slices into 1½-in pieces. Cut 1½ cups tomatoes in half and set aside. In a medium bowl, combine whole tomatoes and onion and spray with cooking spray. Spread onto prepared pan. Roast at 425°F for 10 minutes.

  3. In medium bowl, combine halved tomatoes and garlic and spray with cooking spray. Add to pan with whole tomatoes and onion, stirring to combine. Roast at 425°F until whole tomatoes are shriveled and onion is tender. Remove pan from oven. Sprinkle tomato mixture with basil, 1/4 tsp salt, and pepper and stir gently to combine. Sprinkle remaining ⅛ tsp salt over zucchini spirals. Serve tomato mixture over zucchini.

    Serving size: 3 cups zucchini spirals and 1¼ cups sauce
