RECIPE: Bite-Sized Brownies
If y’all were watching our Insta stories today, you saw that Olivia (and her assistant Teddy) made two-bite brownies topped with tiny sprinkles and they were actually so so good.
Getting the kids to help out in the kitchen or completely run the show and make things themselves (depending on their age), is a great way to keep them entertained during the lockdown. Plus, if we can get some delish treats out of it, it’s a major mom win 😍
This brownie recipe takes 25 minutes to prep and 35 minutes to bake, so it’s a super effective way to kill at least one hour with your kids (or sneak an hour to yourself) this week.
INGREDIENTS:
BROWNIE:
½ cup butter
1 cup white sugar
2 eggs
1 tsp vanilla extract
⅓ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ tsp salt
¼ tsp baking powder
FROSTING:
3 tbsps butter, softened
3 tbsps unsweetened cocoa powder
1 tbsp honey
1 tsp vanilla extract
1 cup confectioners' sugar
DIRECTIONS:
Preheat oven to 350°F (175 degrees °C).
Grease and flour mini-muffin pan.
In a large saucepan, melt the butter.
Remove it from heat and stir in sugar, eggs, and vanilla extract.
Beat in cocoa, flour, salt, and baking powder.
Pour the batter into prepared pan.
Bake in preheated oven for 25 to 30 minutes. Make sure you don’t overcook!!
To make the frosting: Combine all of five ingredients and stir until the mix is smooth. Frost brownies while they are still warm.
