RECIPE: Lemon Garlic Dijon Vinaigrette
If you’re wanting a light meal or side dish that’s fresh, healthy and feels like summer, then this recipe is for you! Nat whipped up a salad yesterday using a head of iceberg lettuce and topping it with a thinly sliced, mild, white onion, a chopped cucumber, and halved cherry tomatoes. You can also add avocado if you have it or any other fave veggies.

INGREDIENTS
1 tbsp fresh lemon juice
1/2 tsp Dijon mustard
1/4 tsp fresh ground black pepper
1/8 tsp sea salt
1. garlic clove - finely minced
3 tbsps olive oil
DIRECTIONS
Using a whisk, mix together the lemon juice, Dijon mustard, black pepper, sea salt & garlic.
Slowly add the oil, mixing until you can see it has fused and is slightly thicker.
Add to your salad, take a bite and pretend it’s summer ☀️
