RECIPE: Roasted Spicy Brussels Sprouts
We put up a sticker in our Insta stories yesterday and asked if you guys are cooking more during self-isolation and it turns out this lockdown has 89% of you in the kitchen more than usual, whipping up your own meals rather than eating out/ordering in. If you’re looking to spice up your repertoire with a healthy new dish, WW Canada’s Roasted Spicy Brussels Sprouts recipe makes for a really great side dish or even a snack! Nat loves Brussels sprouts and is a huge fan of hot & spicy, so she’s a major fan of this recipe.
This dish is quick and easy to make (20 minutes to prep and 25 minutes to cook) and the Brussels sprouts come out crispy and delicious! The recipe below serves four (3/4 cup per person), and if y’all are on the WW bandwagon, you’ll be happy to know it’s valued at 1 SmartPoint per serving for green, blue and purple.
Nat squirted some fresh lemon juice over the Brussels sprouts and suggests adding a piece of chicken to the plate to really round out the meal. But seriously - this homemade recipe is better than what you get at a restaurant, so try it out this week! It may even make you dance like Nitty haha 😜
INGREDIENTS:
1 lb uncooked Brussels sprouts - medium-size, or quarter large Brussels sprouts to reduce cooking time
1 tbsp olive oil
1 tsp ground ginger
1 tbsp low sodium soy sauce
¼ tsp table salt
¼ pinch freshly ground black pepper
1 slice uncooked Canadian bacon - diced
1 tbsp Sriracha hot sauce
DIRECTIONS:
Preheat oven 200°C (400°F). Line a roasting pan with aluminum foil or coat pan with cooking spray.
Remove any yellow outer leaves from Brussels sprouts; trim ends and slice each one in half.
Place Brussels sprouts, oil, ginger, soy sauce, salt and pepper on prepared pan; toss to combine and roast for 15 minutes.
Remove pan from oven and add ham and sriracha; toss to coat. Roast until Brussels sprouts are just tender when pierced with a knife and bacon is just crispy, about 10 minutes.
