RECIPE: Grilled Asparagus With Orange Butter

The Grilled Asparagus With Orange Butter only takes 15 minutes to make (10 to prep and 5 to cook) and serves eight people, so it’s the perfect dish to make for a larger family or for a summer dinner party/BBQ (once COVID comes to an end). For those on WW this dish is valued at 1 SmartPoint per serving (6 asparagus spears) for green, blue and purple.

What sets this recipe apart from your typical grilled asparagus dish is that the sauce is made with fresh orange juice and it’s topped with a sprinkle of grated orange which really makes the dish look so beautiful and taste so good and citrusy. INGREDIENTS

  • 2 tbsp unsalted butter - melted

  • 2 tbsp fresh orange juice

  • 1 tsp table salt

  • ½ tsp freshly ground black pepper

  • 2 pounds uncooked asparagus - thin spears (about 48), trimmed

  • 2 sprays cooking spray

  • 1 tbsp orange zest - finely grated (for garnish)

FYI - Try to make sure the spears are all the same thickness so that they cook evenly and at the same time and tear off the fibrous ends of the asparagus spears before grilling.

DIRECTIONS

  1. Preheat grill to medium heat.

  2. Combine butter, juice, salt and pepper in a small bowl and set aside.

  3. Coat asparagus with cooking spray and set over direct heat (covered). Grill for about 5 minutes, turning once, until marked and tender.

  4. Transfer to a serving platter and brush with butter mixture; garnish with zest (using a citrus grater to lightly grate the orange over the platter).
