RECIPE: Chicken Salad (Sandwiches)

We made this WW-friendly chicken salad recipe for lunch today and it did not disappoint! We added some extra goodness into the mix (jalapeños, red peppers and diced apples) and we served it as a “sandwich” in a lettuce boat and on a baguette for the kids. It’s fresh, filling and delish. And it’s fun because you can customize it with your fave ingredients and serve it a few different ways.

The recipe below is worth 3 SmartPoints per serving (about 2/3 cup) for green and 1 for blue and purple. It takes a quick ten minutes to prep and it serves six, so it’s great if you have a million kids like we do or you can always save any extra salad for leftovers. Enjoy!

INGREDIENTS

  • ¾ pound cooked skinless boneless chicken breast - cut into bite-sized pieces

  • ½ cup uncooked celery - finely diced

  • ⅓ cup - unsweetened dill pickles or sweet gherkins - finely diced

  • ¼ cup reduced calorie mayonnaise

  • 2 tbsps - fat free sour cream

  • 2 tbsps fresh parsley - chopped

  • 1 tsp - Dijon mustard

  • 1 tsp - fresh lemon juice

  • ½ tsp - table salt

  • ¼ pinch freshly ground black pepper

DIRECTIONS

  1. Place all ingredients in a large bowl; mix until blended.
