RECIPE: Tomato Soup

It was rainy in Cape Cod today and therefore the perfect day for Nitty to make a soup! Everyone in the fam was mowing down on wings and baguettes with chicken, cheese and barbecue sauce, but Nat took the healthier route and made a tomato soup with small sandwich on the side. We got this recipe from WW and linked it in our Insta stories, but we also wanted to write it out for y’all below.

This soup is great for anyone wanting a healthier option for lunch. It’s only one SmartPoint per bowl, but since Nat drizzled some olive oil into it, we’re thinking in might be two points. Either way, it’s all carrots, tomatoes, onions and stock, so it’s full of goodness. And of course Nat adds chili flakes or cayenne to make it spicy, but you can just keep it the way it is.

This is definitely a recipe you’re going to want to try over the winter because its filling, it’s warm and it’s delicious!

INGREDIENTS:

  • 1/2 tbsp olive oil

  • 2 carrots - diced

  • 1 red onion - finely sliced

  • 3 cloves garlic - finely sliced

  • 6 large tomatoes 

  • 1 stock cube made up with 500ml hot water

  • 6 basil leaves

  • 1 tbsp tomato puree / paste

  • 1 tsp sea salt

  • 1 tsp sugar

  • 1/2 tsp freshly ground pepper

  • balsamic vinegar, chili flakes or cayenne - optional

DIRECTIONS:

  • Heat oil in a large saucepan. Once hot, add the onions and carrots and cook for 5-7 minutes. Stir constantly to prevent from sticking to bottom of pot. 

  • Once the onions have become tender and translucent, add a tablespoon of water and use a wooden spoon to scrape any of the browned onion into the mixture. This will prevent the onions from burning to the bottom of the pot and will also add to the flavour of the soup. Add garlic and saute for one minute.

  • Stir in the chopped tomatoes, stock, basil leaves, tomato puree, salt, sugar and pepper. Bring to a boil and then reduce heat until the mixture is gently simmering. 

  • Cover the pot and leave to simmer for 30 minutes, stirring occasionally. 

  • Remove from heat and use an immersion blender to blend until smooth. (You could also use a processor or blender, adding the mix in batches & blitzing until smooth.) 

  • Taste & add more seasoning if needed. 

  • Serve immediately with a topping of balsamic vinegar, chili flakes, cayenne or whatever you’d like!
