RECIPE: Chicken & Steak Fajitas

If trying to decide what to make for dinner each night is your least favourite “mom job” in the world, you’re not alone. That’s why we rely on a few go-to recipes that are super simple to whip up without putting much thought into 🤪

Nitty made fajitas on her fave grill last week ! It’s literally the perfect meal for a busy weeknight. Just grill up the veggies, grill up the meats, toss everything onto a tortilla and BAM - dinner is served.

INGREDIENTS

  • 4 tablespoons olive oil

  • 1/2 teaspoon chili powder

  • 1 1/2 teaspoons salt and pepper

  • 2 boneless, skinless chicken breasts

  • 2 cuts of steak

  • 1 onion - thinly sliced

  • 1 green pepper - thinly sliced

  • 1 red pepper - thinly sliced

  • 1 yellow pepper - thinly sliced

  • 1 orange pepper - thinly sliced

  • Cheese - shredded

  • Lettuce - shredded

  • Tortilla wraps - warmed

DIRECTIONS

  1. Marinate chicken and steak in chilli powder, olive oil and salt & pepper mix for 5 to 30 min.

  2. Grill up the onion and the green, red, yellow and orange peppers on high heat until tender. Remove and keep warm.

  3. Drain chicken and steak from marinade and add to grill, cooking over high heat until no longer pink.

  4. Slice meat and serve with sautéed pepper and onion mix, shredded cheese, shredded lettuce and tortilla wraps.

  5. Add additional toppings (optional): taco sauce, salsa, guacamole and/or sour cream - whatever you’re feelin’ !
