RECIPE: Mini Turkey Meatloaves

This is the one recipe we always go back to thanks to the ladies over at Sweet Potato Chronicles! Mini turkey meatloaves are quick to prepare and they’re the perfect size for kids. They are just as delish as the classic meatloaf but the turkey and oats combo make them a lighter option which is great. You can pair these little meatloaves with potatoes and another vegetable for a well-rounded meal, but they actually have a lot of veggies in them already so you can feel good about serving them to the fam without a bunch of additional sides. Check out the recipe below that makes 6 mini meatloaves!

INGREDIENTS

  • 1 glug of olive oil

  • 1/3 cup onion - finely diced (about half of a medium onion)

  • 1/3 cup celery - diced small

  • 1/3 cup carrot - peeled and diced small

  • 1/2 cup rolled oats

  • 1 1/2 lbs ground turkey

  • 1/4 cup ketchup

  • 1 egg

  • 1/4 cup parmesan - grated

  • 2 tbsp ketchup

  • 1 tsp Worcestershire sauce

DIRECTIONS

  1. Preheat oven to 375 degrees.

  2. Warm olive oil in a pan over medium heat.

  3. Add vegetables and allow them to start to soften (about 3 to 5 minutes). Remove from heat and allow to cool.

  4. In a large mixing bowl, combine your meat, oats, ketchup, sauteed vegetables, cheese and egg and mix with hands or a fork.

  5. Use a 1/3 cup measure to scoop up the mixture and put it into the muffin tin.

  6. In a small bowl, mix together 2 tbsp of ketchup and 1 tsp of Worcestershire sauce.

  7. Use a small spoon to smear the glaze over the top of your mini meatloaves.

  8. Cook for 40 minutes (until the internal temperature of the meatloaf is 160-165 degrees).
