RECIPE: Chicken & Cheese Quesadillas

There’s nothing like quesadillas at the cottage!! This is a really quick, easy, delish, family-friendly meal that we rip out whenever we have a lot of people to feed and we don’t have a lot of time to do it 🤪 

We used this WW recipe as inspo, but honestly the variations are endless so you can mix it up and add whatever ingredients your fam loves most. We sautéd a ton of veggies (because we didn’t have any beans available) and you can go light on the cheese or take it out completely if you’re looking for a healthier option with fewer points. We love a nice and spicy salsa and we also add guac or just a mashed up avocado to keep things simple!

INGREDIENTS

  • 2 cups cooked skinless boneless chicken breasts - chopped or shredded

  • 1 tbsp fresh lime juice (or to taste)

  • ¼ tsp cumin seeds

  • ¼ tsp table salt

  • 8 medium whole wheat tortillas (about 6-inches each)

  • ½ cup fat-free black bean dip (spicy-variety)

  • ½ cup low-fat shredded cheddar cheese (sharp-variety)

  • 2 medium uncooked scallions (green parts only) - diced

  • ½ cup fat free salsa

  • 4 sprays olive oil cooking spray

  • 2 tsps light sour cream

DIRECTIONS

  1. In a small bowl, combine chicken, lime juice, cumin and salt; toss well to combine.

  2. Place 4 tortillas on a flat surface and spread each one with 2 tablespoons of bean dip. Top each with about 1/3 cup of chicken and then sprinkle each with 2 tablespoons of cheese; divide scallions over top. Cover with remaining tortillas and gently press down on each one.

  3. Coat a very large nonstick skillet with cooking spray; place over medium heat. Cook quesadillas in a single layer until golden brown on bottom, about 2 minutes. Flip quesadillas and press down on them with a spatula; cook until golden brown on second side, about 2 to 3 minutes more. Remove to a serving plate and cover to keep warm (or place in oven); repeat with remaining quesadillas.

  4. Slice each quesadilla into 4 pieces; serve with salsa and sour cream.

    * 1 quesadilla + 2 tablespoons of salsa + 1 tablespoon of sour cream per serving
